PREPARATION

  1. Wash the potatoes and boil them in plenty of salted water with the shortening until soft. Drain, peel while still hot and let cool down. Cut the cooled potatoes into 4 to 5 mm thick slices and put them in a bowl.
  2. For the dressing, heat the broth, mix with vinegar and mustard, season with salt and 1 pinch each of cayenne pepper and sugar. Add a handful of potato slices and mash with a hand blender. Mix the dressing gradually with the potato slices until the liquid is completely absorbed.
  3. Peel the onion and cut into small cubes. Heat 1 tablespoon of oil in a frying pan and saute the onion cubes over a low heat until translucent. Clean, wash and slice the radishes. Peel and slice the cucumber. (Ulrike: unpeeled diced) Fold the brown butter, onion, parsley, radishes and cucumber slices into the potato salad. If desired, coarsely grind pepper over it.

Thanks for the reminder, I had seen the preparation once years ago on TV at Schuhbeck, found interesting, and forgotten again.
