Cooking rice: how to make it perfect even without a rice stove

Cooking rice is actually super easy. Still, there are a few things to keep in mind when doing this if you don’t want the rice to stick together or become mushy. How much water is needed for one cup of rice? Are there differences in cooking time between wild grain rice and classic rice? Can rice drain?How much rice do you need per person?

Before cooking: Wash rice

You want loose rice that does not stick together? Then you should wash the rice thoroughly before cooking it. To do this, put the rice in a pot and cover with water. Run your hands through the rice a few times. Strain the milky-white water through a sieve. Rinse the rice with fresh water until the water is clear.

As a rule, it is enough to wash the rice twice. This will prevent the rice from sticking together later due to the excess starch.

Tip: This first step applies to any rice cooking method and to all types of rice. Sushi rice usually needs to be rinsed even three to four times before you can cook it.

Cooking rice: Water rice method

Water rice is one of the most popular ways to cook rice. Why? The rice cannot burn in the pot because it is cooked with extra water. The rice-to-water ratio here is 1:6, so there are six cups of water to one cup of rice.

The disadvantage of water rice: healthy nutrients are flushed out of the rice. These dissolve in the water when rice is cooked and end up in the rice bowl afterwards Drain the rice in the sink. 1. Wash rice twice.

Steaming rice: swelling rice method

With the swelling rice method, the rice retains its minerals and vitamins because there is no excess water to wash them out. Because you are steaming the rice instead of boiling it, it absorbs the water completely. The rice-water ratio is 1:2 – to one cup of rice add two cups of water.

Main difference from water rice: you leave the rice with the lid closed soak. The rice-swelling method is considered especially gentle. How it works:

1. Wash rice twice.
2. Put the rice in a pot and pour twice the amount of water over it.
3. Add two teaspoons of salt to the water.
4. Heat the rice on the highest heat.
5. Boil the water, lower the temperature to medium heat.
6. Add a pinch of vegetable broth powder if desired.
7. Put a lid on the pot.
8. Simmer rice with lid on for 15-45 minutes (depending on the type of rice) until water is absorbed.
9. Stir in between so that the rice does not burn.
10. If rice is not cooked after prescribed cooking time, add a little water and continue steaming.
11. Remove pot from heat, stir rice vigorously and serve hot.

How long to cook the rice? Duration according to type of rice

How long you need to cook your rice depends primarily on the type of rice you are cooking. Here’s a quick rundown on rice cooking times for the most popular varieties:

  • Basmati rice: 15 minutes
  • Jasmine rice: 20 minutes
  • Parboiled rice: 20 minutes
  • Brown rice: 30 minutes
  • Black rice: 35 minutes
  • Wild rice: 45 minutes

In general, white rice cooks faster than coarse whole grain rice. If you want to cook dark rice, you also need a little more water.

How to tell if the rice is done?

Rice is done when the inner core is no longer hard. Similar to cooked pasta, however, the rice should still be slightly al dente, i.e. have some bite to it. The rice is perfect when it is fluffy and crunchy. The individual rice grains should not stick together like mush – unless you are cooking risotto, sushi rice or rice pudding.

How much rice per person?

The question of how much rice to cook per person is often a headache. The amount of rice depends on whether the rice is intended as a side dish or a main course. Here is the simple rule of thumb:

  • Rice as a side dish: 60 g per person
  • Rice as a main dish: 100-120 g per person

Tip: Measuring the amount of rice per cup is never quite accurate, as cups are not standardized and vary in volume. Therefore, it is better to weigh the rice portion with a kitchen scale.

Store rice: Can rice drain?

Airtight packed rice will keep for two years if stored in a dry and cool place – that’s what it usually says on the best-before date. However, as the magazine of research and knowledge writes, rice, along with salt and sugar, is one of the foods that never go bad. Rice can therefore not expire.

This applies at least to wild rice as well as classic long-grain rice such as basmati and jasmine rice. Natural rice (whole grain rice), on the other hand, may expire after one or two years, because it contains more fat, which can convert.

Important: That rice can’t drain refers to uncooked rice. In cooked form, however, rice can only be kept in the refrigerator for about two days.

Reheat rice: Here’s what you should watch out for

Because the bacteria thrive at room temperature, you should put hot rice in a lidded container right after cooking and put it in the fridge instead of letting it cool in the air. This lowers your risk of spreading the bacteria further.
